Paleo Challenge: Day 1

Yesterday marked the first day of the 30-Day Paleo Challenge at NWCF.  Nutshell explanation: no grains or processed foods for 30 days.  If that doesn’t quench your thirst for Paleo knowledge, go here to learn more.  For most people, this diet doesn’t sound too crazy.  In fact, to some it might even sound normal.  Eat meats, veggies and fruits; don’t eat candy, french fries or bread.  But for those of you that know me and my eating habits, this could easily be classified as torture.  Following this diet would mean eliminating my two favorite foods, and one of my favorite restaurants: SPAM, rice and McDonalds.  Not to mention two of the greatest things to happen to me and my belly… Marination Mobile and Where Ya’ At Matt!  Luckily, about 50 other people at the gym got suckered into doing the challenge too, so I’ve got a nice little support group.

The challenge started yesterday, and I can honestly say to the best of my knowledge that it was the first time I can remember where I went 24 hours without eating any grains or processed foods. One day down, 29 to go…

Day 1 Meal Plan:
Breakfast – 3 eggs, 6 strips of bacon
Lunch – chicken breast, side of broccoli, peppers and onions
Snack – 1 banana, handful of raw almonds
Dinner – Rybolt Salad (lettuce, 2 scoops of steak, guacamole, peppers, onions, salsa)
Snack – Lara Bar

Recently the wife and I have been procuring paleo recipes from http://www.health-bent.com . Everything we’ve made from there is super delicious. They really put the effort into their recipes.

HIGHLY recommend the sweet potato pancakes and the ‘paleo hash browns’.
