Paleo Challenge 3.0: Day 42

Recap of the 2012 Daytona 200!

Breakfast:
3 eggs
4 strips of bacon
A few chunks of red potatoes
A few bites of gluten-free pancakes (maple syrup, whip cream, fresh fruit)
Americano w/cream

Lunch:
1/4 pound of pepperoni
Plantain chips
Dried mango

Snack:
Plantain chips and sweet potato chips… lots
Guacamole

Dinner:
Grilled chicken thighs marinated in Frank’s Red Hot
Spinach salad with strawberries, almonds and goat cheese
